Viticulture: Organic and biodynamic practices. Pinot Noir planted in 1961 in the cool Le Mont de Fer parcel, on deep calcareous clay over chalk. Low yields and hand harvesting.
Winemaking: Foot-trodden grapes undergo around 36 hours of maceration before fermentation in stainless steel. Aged for around 36 months on the lees in bottle. Unfiltered and disgorged with an Extra Brut dosage of 3 g/L.
