Viticulture: Organic farming without certification, with low yields and hand harvesting. 0.20 ha parcel of around 60-year-old vines on clay-limestone soils.
Winemaking: Fully destemmed with pre-fermentation cold maceration and around 15 days of vatting. Aged for 16 months in 40% new oak.
Domaine Jean-Marc Millot, basé à Nuits-Saint-Georges, Bourgogne, se spécialise dans le Pinot Noir. Fondé en 1992, il comprend des vignobles de Grand Cru renommés comme Échezeaux et Clos de Vougeot. Alix Millot dirige la vinification depuis 2014, en se concentrant sur des pratiques biologiques et une intervention minimale pour exprimer le caractère du terroir.
