Viticulture: Certified biodynamic since 2005. Sangiovese from south- and southwest-facing vineyards at 210–290 m. Each parcel hand harvested separately.
Winemaking: Native-yeast fermentation in small wooden vats, each vineyard vinified separately. Aged for 34 months in 15–17 hL oak barrels, followed by 30 months in bottle.
Stella di Campalto, établie en Toscane en 1910 et relancée en 1992, est une pionnière dans la production de vin biodynamique. Son domaine, le Podere San Giuseppe, est connu pour ses pratiques biologiques depuis 1996 et biodynamiques depuis 2005. Le domaine se spécialise dans le Brunello di Montalcino, caractérisé par son élégance et sa délicatesse aromatique, et libère ses vins plus tard pour un développement optimal.
