Viticulture: Practicing organic without certification. 1.78 ha parcel in Comblanchien, with 50-year-old vines on limestone-dominant clay-limestone soils. Hand harvested.
Winemaking: Destemmed. Indigenous-yeast fermentation with around 15 days of vatting. Aged for 14 months in oak with around 10–20% new oak depending on vintage. Unfined and unfiltered.
Domaine Jean-Marc Millot, basé à Nuits-Saint-Georges, Bourgogne, se spécialise dans le Pinot Noir. Fondé en 1992, il comprend des vignobles de Grand Cru renommés comme Échezeaux et Clos de Vougeot. Alix Millot dirige la vinification depuis 2014, en se concentrant sur des pratiques biologiques et une intervention minimale pour exprimer le caractère du terroir.
