Viticulture : Pratiques biologiques et biodynamiques. Pinot Noir planté en 1961 dans la parcelle fraîche du Mont de Fer, sur des sols profonds d’argiles calcaires reposant sur la craie. Rendements faibles et vendanges manuelles. 

Vinification : Raisins foulés aux pieds, puis macération d’environ 36 heures avant fermentation en cuves inox. Élevage d’environ 36 mois sur lies en bouteille. Vin non filtré, dégorgé avec un dosage Extra Brut de 3 g/L. 


Adrien Dhondt dirige Dhondt-Grellet, une maison de Champagne connue pour ses vignobles biologiques et biodynamiques situés dans la Côte des Blancs en France. Adrien se concentre sur la production de Champagnes de vignoble unique expressifs et axés sur le terroir, utilisant des techniques d'intervention minimale et des levures indigènes. Ses cuvées notables incluent "Le Bateau" et "Les Terres Fines".
