Viticulture: Certified organic since 1996 and biodynamic since 2005. Multiple estate parcels around Castelnuovo dell’Abate at 240–340 m, each farmed and harvested separately. Hand harvested. 

Winemaking: Destemmed and fermented separately by parcel with native yeasts in neutral wooden vats. Gravity handling. Aged in a mix of barriques and larger botti, with extended bottle ageing before release.

Stella di Campalto, gegründet in der Toskana im Jahr 1910 und wiederbelebt im Jahr 1992, ist ein Vorreiter in der biodynamischen Weinproduktion. Ihr Anwesen, Podere San Giuseppe, ist seit 1996 für organische Praktiken und seit 2005 für biodynamische Praktiken bekannt. Die Kellerei hat sich auf Brunello di Montalcino spezialisiert, der durch Eleganz und aromatische Feinheit gekennzeichnet ist, und bringt Weine später heraus, um eine optimale Entwicklung zu gewährleisten.
